Bulgur salad with sun dried tomatoes&olives

ingredients:

  • 1/2 cup bulgur

  • 1 cup water

  • sun dried tomatoes

  • olives

  • rockets

  • spinach(fresh)

  • 2 tbs pesto

  • olive oil

  • parmesan

  • salt,pepper


cooking method:

Use a little oil in a pot to fry the bulgur on low heat for a minute,with constantly steering to give it a little color.(you can just boil it straight away but with frying it a little first it wont be too soft/mushy).Add boiling water,season with salt and pepper,boil it for 2-3 min take it off from heat and cover it,let it sit for 10 min.

After it cools mix it with the pesto,olives and sun dried tomatoes(use some of the oil from the tomato).Mix the salad with some olive oil,serve with the bulgur on top of a salad base,use leftover olives and tomatoes,finish with parmesan shavings and balsamic reduction.
