Grilled halloumi cheese and tomato on pineapple rice

Ingredients:

  • 2 thick slice of halloumi cheese

  • 1 beef tomato

  • 1 can sliced pineapple

  • basmati rice

  • salt,pepper,chilli flakes

  • red onion pickle for garnish

  • parsley for garnish




Cooking method:

Season the cheese with salt,pepper and chilli to taste(use any spice you like),heat up a frying pan with some oil and grill the cheese for a few minutes per side,at the same time in another frying pan grill 2 slices of tomato and and 2 slices of pineapple,few minutes per side as well,until gets a nice colour.

Chop the remaining pineapple and add to the boiled rice.

Serve hot,garnish with red onion pickle.
