Oven baked cod on basmati rice with creamy white wine sauce and samphire

ingredients:

  • 2 portion of cod

  • Handful of samphire

  • Basmati rice

  • Lemon

  • Cherry tomato

  • Ingredients for the sauce

  • 2 tbs butter

  • 2 tbs flour(can use corn flour)

  • 0.5 ml white wine

  • 1 dl milk

  • Fish stock



Cooking method for the sauce:

In a pan melt the butter,add the flour and stir in well on low heat to get a creamy roux.Then add the milk,the wine and some fish stock,season with salt and pepper and let it simmer on low heat for a few minutes.


For the fish:

Season the fish with salt,pepper,then heat up a frying pan with some oil.Place the fish with skin down first and fry it for 1-2 min to get a nice color then turn the fish with skin side up,fry it only for few seconds then put it in a pre heated oven on 180C roughly 12 min(depends on the size of the fish)

In a pan with some butter add the samphire, season with salt,pepper and simmer for 1-2 min.

Add the cherry tomato in the oven for the last 5-8 min,serve hot with the cooked rice.
