Lamb noisette with hasselback potatoes&roasted veg,lamb jus

ingredients:

  • 2 portion lamb noisettes

  • 4-5 potatoes medium sized

  • 2 carrots

  • 2 parsnips

  • 1 bell pepper

  • 1 zucchini

  • 1 eggplant

  • thyme,rosemary,mixed herbs

  • honey

  • garlic

  • 50 g butter

  • oil

  • salt,pepper

  • balsamic reduction




cooking instruction:

Start with the washed potatoes,cut in every 3 mm but not all the way down,place them in a baking tray.Melt the butter,add finely chopped garlic and brush the potatoes with half of it,season with salt and pepper.Bake it in a pre heated oven on 180C for about 45 min,once or twice take them out and brush again with the rest of the butter.

Cut the prepped veggies to chunky peaces,place them on a baking tray and add oil,balsamic vinegar,salt,pepper,thyme,honey and mixed herbs.Bake it on 180C for about 20 min.

Sear up the lamb on both side with salt and pepper to get a nice color,then place them on a baking tray,put it in the oven,roast as you like.Use the remaining jus from the meat,reduce until reaches desired consistency.

Let the meat rest for a minute then serve it all hot.
