Leek &Potato soup

ingredients:

400 g potatoes

400 g leek

1 onion

0.8 l vegetable stock

150 ml cream

50 g butter

salt,pepper




cooking instructions:

Melt the butter in a pot,add the potatoes,leek and onion cut into smaller pieces,season with salt and pepper. Steering every now and then let the vegetables to steam for about 5 min,ten add the vegetable stock,on low heat boil it for 25-30 min until your vegetables are well cooked.Take it off the heat to blend it smooth with a hand blender,then add the cream,mix it into the soup well,no need to boil it up again.

Serve it with balsamic vinegar and croutons.
