ingredients for the bread:
500 g flour
350 ml water (you can use 100 ml milk+100 ml potato water+rest plain water)
2 smaller potatoes
3 tbs butter(you can use oil)
3 tsp yeast
1 tsp sugar
1/2 tsp salt

Ingredients for the salsa verde:
1 cup fresh parsley (about 50 g)
3/4 cup fresh basil (about 35 g)
2 cloves garlic
1/4 cup capers
1/2 cup olive oil
1 tbs balsamic vinegar
salt
juice of half a lemon

To make the bread start with boiling the peeled and cut potatoes,let it cool then mash it.Heat a little of the water and add the sugar then the yeast,set aside for a few minutes to rise the yeast.In a bowl mix all the ingredients to make a soft dough,no need to knead.Grease a bread tin,use oil or butter then add the dough and bake it for about 45 min,then take the bread out and put it back into the oven to bake for another 5-10 min.Let it completely cool before cutting it up.
For the salsa verde add all the ingredients to a food processor and blend it all together until everything is finely chopped.
Serve it on toast,roast chicken/pork or use it to spice any dish.
