Sweet corn fritters

ingredients:

  • 1 200 g can sweet corn

  • 1 garlic

  • 1/2 onion

  • 1 cup fresh breadcrumbs(or soak 2-3 slices of bread in water for 2 min then squeeze the excess water(

  • 1 small can chickpeas

  • 1-2 tbs flour(can be corn flour)

guacamole:

  • 1 avocado

  • 1/2 onion

  • salt,pepper

  • lemon juice

  • olive oil

cooking method:

In a blender add the chickpeas,onion,garlic and grind them to make a fine paste.Mix it with the bread crumbs and the corn,season with salt and pepper.Add the flour to make the mix more easy to shape.

Use a spoonful to shape a flat round piece and fry it on some oil few minutes per side.

Try to start with high heat to give it a harder outside then reduce heat,turn and repeat.It falls apart easily since there is no eggs in it. for the guacamole:

blend everything together in a blender
