Eggplant&tomato spaghetti

ingredients

  • 1 onion

  • 1 medium eggplant, cut in 1/2-inch cubes

  • 4 cloves garlic, smashed and chopped

  • 2 tbsp extra virgin olive oil

  • 1 400g can plum tomatoes including juice

  • salt and fresh ground pepper

  • basil or parsley, for garnish

  • spaghetti


cooking method:

Saute the onion and garlic on olive oil,add salt&pepper,then the diced eggplant,and the tomatoes from the can,including the juice of it,add chopped basil.Cook it all together on low heat for about 10 min.

Serve it with spaghetti and cheese,garnish with parsley.
